METHOD

Step # 1

Place lamb, pork, bacon, potatoes, carrots, onion and bay leaves into a large cast iron casserole pot and add 2 litres of water.

Step # 2

Cover and bring to the boil then lower the heat and allow to simmer for 2 hours.

Step # 3

Stir frequently to prevent the mixture from sticking to the bottom of the pan.

Step # 4

Add the peas and rice to the pot along with 2.5 litres of water. Season to taste, cover and simmer for 2 hours.

Step # 5

Stir frequently to prevent the mixture from sticking to the bottom of the pan.
