Breakfast is one of my favorite meals because it has so many great dishes! These three recipes are some breakfast sides that I love because they’re easy to make but still have a lot of flavor.

The best breakfast side dishes provide plenty of energy like bananas, eggs, oatmeal, or potatoes. They need to be soft enough not to scratch your throat with crumbs but still have some substance to them.

Sweet Potato Hash

Preheat oven to 425 degrees. Sift together flour, baking powder, and salt. Add butter and cut in with a pastry blender or two knives until the mixture resembles coarse crumbs. Stir in buttermilk just until the dough comes together; do not overmix. Turn onto a board lightly sprinkled with flour, then knead gently six times or just until smooth. Pat dough into a round, then cut out rounds using a greased glass for the shape and dipping the top of your biscuit cutter in flour to prevent sticking. Transfer biscuits to baking sheet. Bake 15 minutes on one side, brush with melted butter if desired, then flip over and bake another 15 minutes or until golden brown.

Biscuit dough requires just a few ingredients and is easy to make in large batches for freezing, as well! This recipe yields 12 biscuits which are fluffy on the inside with crisp edges around the outside. You can enjoy these biscuits either warm from the oven or cold straight.

Cinnamon Rolls

Place the dough onto your baking sheet with more flour to avoid sticking. The edges of the rectangle should be about one inch in height as well.

Cut the dough into strips that are no thicker than a quarter of an inch in width.

When they’re done, transfer them out of the pot onto a greased baking sheet and let cool off on top of your oven with just the light turned on. After about 20-25 minutes at 400 degrees Fahrenheit, take it out from under the warm oven once the dough has hardened.

Then, top it with the Cinnamon Sugar Mixture and allow it to cook for an additional five minutes or until it caramelizes. Once done, take out of the oven and cover loosely in foil or wax paper to keep warm as you wait to serve everyone else their breakfast!

If you need something sweet, you can’t go wrong with a muffin. Perfectly bite-sized, they make the perfect accompaniment to coffee. These blueberry muffins are just right for breakfast because they’re sweet but not overpoweringly sugary, and moist. They take about 30 minutes to prepare, giving you enough time before work.

Preheat oven to 375 degrees. Grease muffin pan or line with paper liners. In a bowl, whisk together flour, baking powder, and salt. Set aside. In another bowl, mix eggs and sugar until light in color and thick in texture. Add melted butter to the mixture from the second bowl, whisking until well blended. Add flour mixture to the second bowl and stir just until combined. Stir in blueberries by hand with a spatula or large spoon and fill muffin cups about three-quarters full with batter (about one rounded tablespoon of batter per cup).

Pour hot coffee into each cup before adding the batter so that the coffee will bake into the muffins.

In another bowl, mix brown sugar, white sugar, eggs, vanilla extract (optional), butter, or oil with a mixer until smooth. Then add in all other ingredients except for the bananas and stir well. Last, fold in bananas until well mixed.
